Thanks George - I'm pretty sure it was a Bluebottle. I've been looking on the internet and it would appear, as you say, that a number of different flies exhibit this behaviour but there doesn't seem to be a concensus as to what they are doing or why!
Perhaps this is Calliphora vomitoria? (Though I'm sure there are similar species which exhibit the same behaviour)
